What are y’all making for breakfast for the kiddos or for yourself during this quarantine time? My go-to breakfast has always been peanut butter oatmeal porridge. I mean I grew up eating peanut butter cornmeal porridge. This was a staple breakfast in my parents’ household, as in many other Zimbabwean households, so it’s only fitting that my kids get to enjoy it too.
Using the Instant Pot has made it so much quicker and easier to prepare the peanut butter oatmeal porridge because it cuts down the time by half and it also allows it to be a hands-off process. No continuous stirring and breakfast is ready in a matter of minutes. It took me a while to figure out the appropriate quantities of liquid and peanut butter to make this porridge without getting the burn message. You can make this porridge a day before, store it in the fridge and warm it up for breakfast the next day.
I got the Instant Pot sometime last year and it has been a huge time saver for me. If you have one then I’m sure you know what I’m talking about. If you don’t know what it is, it’s a pressure cooker with a bunch of different functions, saute (my favorite!), rice cooker, meat stew, soup/broth, steamer, porridge cooker, yogurt (YES! Yogurt). What sold me on this appliance was the saute function. Why? Because I make meat stews all the time so being able to brown my meat and cook it right there in the same pot, for less than half the time, is a huge plus for me.
In addition to the peanut butter oatmeal porridge, I’ve been able to make beef and chicken stew, ground beef, spaghetti in meat sauce, rice, beans (in only 30 minutes), pasta and I can’t wait to learn even more recipes. There are so many meals you can prepare in your Instant Pot . Don’t let the aforementioned functions limit you. Other accessories to consider purchasing for your instant pot:
- Instant Pot Tempered Glass Lid – Can be used instead of the pressure lid when slow cooking, sauteing/browning or using the keep warm function.
- Instant Pot Ceramic Non-Stick Interior Inner Cooking Pot – very useful when sauteing/browning, slow cooking, rice cooking and cooking a variety of other sticky foods. It’s always nice and handy to have a second inner pot.

- 1 cup old fashioned oats
- 2 tbsp. creamy peanut butter heaped
- 1 tbsp. dark brown sugar
- 1 pinch salt generous
- 3 cups water
- 1/2 cup whole milk
Ingredients

- Set your Instant pot to the saute function. Add all the ingredients.
- Stir until mixture thickens and begins to boil and stick to the bottom of the pot. This may take a few minutes.
- Cancel saute function.
- Close your instant pot and set to pressure cook, normal heat for 8 minutes.
- After 8 minutes whisk everything together. Serve and enjoy!
