  1. Preheat oven to 325F/165C.
  2. Mash all 3 bananas in a large bowl.
  3. Break the eggs into the bowl. Add the sugar and vegetable oil and vanilla essence. Whisk everything together well.
  4. Add the flour, salt, peanuts and baking powder. Using a spatula, fold the dry ingredients into the wet until well combined.
  5. Pour the batter into a loaf pan greased or lined with parchment paper.
  6. Bake for 60 – 70 minutes until a toothpick inserted in the middle comes out clean.
  7. Let the banana bread cool for about 20 min. Dig in
