Quick and easy banana bread
Moist banana bread made in one bowl. No need to take out your electric mixer for this one.

Ingredients

bananas
overripe
3
eggs
room temperature

cup
dark brown sugar

vanilla extract

vegetable oil
1/2
tsp
salt

all-purpose flour

baking powder

cup
chopped peanuts
Instructions
Preheat oven to 325F/165C.
Mash all 3 bananas in a large bowl.
Break the eggs into the bowl. Add the sugar and vegetable oil and vanilla essence. Whisk everything together well.
Add the flour, salt, peanuts and baking powder. Using a spatula, fold the dry ingredients into the wet until well combined.
Pour the batter into a loaf pan greased or lined with parchment paper.
Bake for 60 – 70 minutes until a toothpick inserted in the middle comes out clean.
Let the banana bread cool for about 20 min. Dig in
