Anyone else buy extra bananas just to be able to make some banana bread? I love banana bread. It’s a big hit at my house and it’s super quick and easy to make, plus the aroma that fills the kitchen is amazing, should be bottled.
Good news, if you hate washing dishes, everything happens in one bowl, YES! I said it, this party happens in ONE BOWL, no need to mix the wet and dry ingredients separately. I promise, it works out. Also your whisk and spatula will be suffice for this one, no need for a fancy mixer!
Banana bread is so versatile. In this recipe I use dark brown sugar. It’s healthier (I think) than white sugar. Not that I’m trying to be healthy or anything. I love the rich brown color it gives the banana bread. Feel free to use what you have. Also, this recipe uses no dairy at all which is a big plus if you’re lactose intolerant or trying to cut dairy out of your diet.
In this recipe I also add some roasted nzungu (peanuts), in Zimbabwe we call them groundnuts, which you can easily skip (ofcourse) if you have allergies or swap out for any kind of nut you love 😉 . I like to run the peanuts in my mini food processor for a few seconds. I don’t much like chopping with a knife. Want to add spices like cinnamon, nutmeg or even ginger, go ‘head. Banana bread will let you do anything. It’s very forgiving.
Enjoy a warm slice of banana bread with a yummy cup of coffee for breakfast or as a snack in the middle of the night when you suddenly get the munchies. Whatever tickles your pickle 😊.

- 3 bananas overripe
- 3 eggs room temperature
- 3/4 cup dark brown sugar
- 1 1/2 tsp vanilla extract
- 1/3 cup vegetable oil
- 1/2 tsp salt
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1 cup chopped peanuts
Ingredients

- Preheat oven to 325F/165C.
- Mash all 3 bananas in a large bowl.
- Break the eggs into the bowl. Add the sugar and vegetable oil and vanilla essence. Whisk everything together well.
- Add the flour, salt, peanuts and baking powder. Using a spatula, fold the dry ingredients into the wet until well combined.
- Pour the batter into a loaf pan greased or lined with parchment paper.
- Bake for 60 – 70 minutes until a toothpick inserted in the middle comes out clean.
- Let the banana bread cool for about 20 min. Dig in
