Easy Roasted Chicken
If you’ve seen some of the posts on my blog, you will notice that this is probably my 3rd chicken recipe out of about 9 recipe posts so far, simply because, I lurv me some chicken. It’s something I never get tired of eating even though I grew up eating a lot of chicken because my parents raise chickens for sell (and consumption of course!) So this roasted chicken uses the simplest ingredients but I absolutely love how it tastes and so does my biggest critic (the hubbs!). I usually marinate it overnight but at least 4 hours will do if you’re pressed for time. I struggled to find a name for the marinate because it’s got a little bit of some of my favorite flavors, fresh lemon juice, fresh garlic, paprika, olive oil and honey(optional), so I decided to settle for “Easy Roast Chicken” So easy to put together and so yummy, you’ll keep going back for more.
Ingredients,
10 chicken pieces of your choice,
For the marinade,
1 1/4 tsp. salt
2 tsp. paprika
1/2 tsp. ground black pepper
2 tbsp. fresh lemon juice
2 garlic cloves, minced
1 1/2 tbsp. olive oil
1 tsp. honey (optional)
Method,
1. Prepare your chicken pieces. Cut off any excess skin or fat. Set aside in a bowl or Ziploc bag.
2. Whisk together all the ingredients for the marinade. Mix well.
3. Pour marinade over the chicken and using very clean hands mix everything together making sure the chicken is fully coated. You can use a spoon or whatever you’re comfortable with. I like to use my hands.
4. Cover and refrigerate for at least 4 hours. The longer the better.
5. Preheat oven to 450 degrees F/230 degrees C.
6. Cover a baking sheet with foil paper. Spray liberally with non-stick spray.
7. Arrange the chicken pieces on the baking sheet and bake for about 45 minutes or until the chicken is golden brown. Flip the chicken pieces over halfway through.
