<p> Like many Zimbabwean households, fish stew is a staple in my own. I cook it almost every week. It’s my dad’s favorite meal and my husband’s too. It’s a big hit at my house and it’s super quick and easy because everything gets mixed up in just one bowl.
My #recipe has #nodairy at all which is a big plus if you're lactose intolerant or just trying to stick to a no dairy diet.
Throw in some chopped nzungu (peanuts) for some crunchy goodness 😋. You'll need,
3 overripe bananas
3 eggs at room temperature
¾ cup dark brown sugar
1 ½ tsp. vanilla extract
1/3 cup vegetable oil
½ tsp. salt
1 ½ cups all-purpose flour
1 ½ tsp. baking powder
1 cup chopped peanuts ( or more 😜) 1. Preheat oven to 325F/165C.
2. Mash all 3 bananas in a large bowl.
3. Break the eggs into the bowl. Add the sugar and vegetable oil and vanilla essence. Whisk everything together well.
4. Add the flour, salt, peanuts and baking powder. Using a spatula, fold the dry ingredients into the wet until well combined.
5. Pour the batter into a loaf pan greased or lined with parchment paper.
6. Bake for 60 – 70 minutes until a toothpick inserted in the middle comes out clean.
7. Let the banana bread cool for about 20 min. Dig in.
