Kale Chips

Trying to grow some kale in containers on my balcony.

According to my research, kale became increasingly popular in the USA in the late 90s. It is described as a superfood as it contains high levels of antioxidants, vitamins A, K and C. What a lot of people do not know is that kale and (collard greens) have been grown and enjoyed in Africa for more than a hundred years.

In Zimbabwe, everyone and their mother has some kale and collard greens growing in their gardens. It’s something I grew up eating and, it wasn’t really because of its nutrition, but because it is an easy vegetable to grow. It can withstand frost and all sorts of bad weather, making it possible to grow all year round. So it was always available to be enjoyed every single day y’all!!


Now they’re so many ways of preparing kale; in salads, soups, sauteed, in smoothies and most recently, as chips. I don’t wanna lie. I’ll take potato chips over kale chips any day. But if you’re looking for a healthier alternative, kale chips are great! So crunchy and surprisingly tasty.

Kale chips are easy to prepare and can be seasoned with whatever you want. Salt and pepper is more than enough to get some yummy kale chips but I like to also add some of my go to spices, paprika and garlic powder.

Kale Chips

Ingredients

  • 5 Kale leaves
  • 1 tbsp. olive oil
  • 1 tsp. white vinegar
  • ¼ tsp. paprika
  • ¼ tsp. garlic powder
  • ¼ tsp. salt
  • ¼ tsp freshly ground black pepper

Instructions

  1. Rinse the kale leaves and dry thoroughly.
  2. Preheat oven to 300 degrees F/150 degrees C.
  3. Using kitchen shears or a knife gently cut out the tough stem.
  4. Cut or tear the kale into pieces about the size of potato chips.
  5. In a large bowl, whisk together the oil, vinegar, salt, garlic powder and black pepper.
  6. Toss the kale pieces in the oil mixture massaging the oil mixture into the kale pieces. Make sure each kale pieces is covered evenly by the oil mixture.
  7. Cover a baking sheet with parchment paper and place each kale piece on it. Do not overcrowd.
  8. Bake at 300 degrees F for 10 minutes. Rotate the baking sheet after 5 minutes.
